Donut Mini-Muffins/TMTT


This is a quick way to add something sweet to your brunch or late breakfast.  I've been making them for years.

1/2 cup white sugar
1/4 cup margarine
3/4 tsp nutmeg
1/2 cup milk
1 egg
1cup flour

Preheat oven to 375.  Grease 24 mini-muffin cups.  Mix above ingredients and mix until just combined.  Fill the prepared mini muffin cups about half full.

Bake in preheated oven about 15-20 minutes.

While muffins are baking, melt 1/4 cup butter in a bowl.  In another bowl, combine 1/2 cup sugar with one teaspoon ground cinnamon.  When the mini muffins are done, remove them from their cups, dip each muffin in the butter, then roll in the sugar.  YUM!

I made these this morning but they came out very flat. I noticed it didn't call for any baking powder...was that accidentally left out of the recipe? It might just be the difference in ingredients here. Next time I'll add some leavening. :)

Is it 1c total sugar and 1/2c butter or are the sugar and butter only for dipping?
