Peach Cobbler for Two


I bought a big box of peaches at Costco and got tired of them before they were all eaten.  So I found this recipe and treated us to a yummy dessert one night, altering it the following way,

1/4 cup flour
1/4 cup brown sugar
3 tablespoons oatmeal
1/4 tsp cinnamon
1 tablespoon coconut
2 tablespoons butter
1 ripe peach

Cut peach in half and place in a small loaf pan.  Scoop out pit and stringy center.  Mix cold butter into the dry ingredients with your fingers and quickly blend the butter into the mix to make tiny bits of butter and flour mixture.  Spoon over peaches and bake @ 350 for 20 minutes.  The peach will still be firm and the crunchy sweet topping a perfect compliment.
